**TIPS FOR PEELING & FREEZING PEACHES ONCE THEY ARE RIPE**

Be sure to let the peaches ripen at room temp until they reach your preferred ripeness, as this may take a few days as some peaches will ripen quicker than others. After they ripen, place them in the refrigerator.

PEACHES WILL NOT RIPEN IN THE FRIDGE

Place a few peaches at a time into boiling water for 15 seconds.

Place peaches into a bowl of ICE water, wait 15 seconds, then slip off the skins (extend time in boiling water in 5 sec. increments if needed to get skins off.)

Cut the peach in half and remove the pit.

One idea is to slice peaches into a bowl with a little orange or lemon juice (to reduce browning). Drain well and place slices flat onto a wax paper lined cookie sheet and freeze. Once frozen, place the peaches in a freezer bag or other container. This way the peaches don’t freeze together in a clump.
