Once a year, Tracy, her sister, and a friend plan Fry Fest. C'mon along and fry anything and everything. And this year, they made Deep Fried Cheese Stuffed Onion Rings, and now, it's time to share the love with you.

Really, anything goes at this event, bring whatever you want. I couldn't make it this year, but I did last year and made Deep Fried Coffee (which was good!).

This year, Tracy said she tried, loved, and ate too many Deep Fried Cheese Stuffed Onion Rings. How do you make it? Here's Tracy with the details.

What you'll need:

  • 2 onions, peeled and sliced and separated into rings.
  • One package non-shredded Mozerella sliced (thinnish)
  • 3 eggs
  • Enough milk to dip onion slices in.
  • Breadcrumbs (your choice, a lot of people like Panko).

Find a ring that'll fit inside another ring with a little space around. Just enough to slip some cheese between. Slip some cheese between slices.

Freeze for one hour.

Dip into milk, then eggs, then breadcrumbs, then eggs again, then breadcrumbs again.  Deep fat fry...maybe two minutes?

Let it cool a tich, then enjoy the cheesy onion goodness!
