- 1 1/2 cups Dijon mustard
- 3/4 cup soy sauce
- 3/4 cup fresh lemon juice (don't discard the rinds)
- 1 turkey
- 2 bunches fresh poultry herbs
- 2 to 3 cups hot water
Turkey time: Preheat oven to 350°. Wash the turkey with water - inside and out - and don't forget to remove the bags of stuff inside the turkey (I throw these in the trash...do as you wish). Pat the turkey dry and place it in a large roasting pan. Next...pour the delicious marinade over the entire turkey.Tie turkey legs together and use some foil to cover the tips. Stuff the cavity with a bunch of the herbs and also the lemon rinds. Place the second bunch of herbs in the roasting pan. I usually put these alongside the turkey. Place a thermometer in the thickest part of the breast and then, cover with foil and let it roast for 2 hours.This is when the smell will start to consume your home and your tummy will begin to growl.After about 2 hours, add some home water to the bottom of the pan. I don't usually add a lot, just a bit. I take a basting brush, dip it in the stuff at the bottom of the pan and then spread it all over the turkey. Do this one more time after 30 minutes.
To finish up the bird, continue to baste every 15 minutes until the thermometer reaches 180–185°. (check the size of your turkey and cooking time to see how long this might be...usually it is a total of about 3 to 4 hours total for me when I make this recipe)
Take the turkey out of the oven and place on a cutting board if possible. Keep it covered as it rests before carving...about 15 to 20 minutes.
