Caribou Coffee Planning to Open New Shop in NE Rochester, MN

Half of Rochester, Minnesota is going to roll its eyes 🙄at the latest coffee news BUT the rest of us are jumping up and down because we finally have another coffee shop coming to NE Rochester! Yes, Caribou Coffee has plans to open up another adorable caffeine-filled shop near Century High School.

Caribou Coffee Has Plans To Open Up Another Shop in Rochester, Minnesota.

I happened to be scrolling Facebook the other day when I saw a story that the Post Bulletin published about a new coffee shop in the works for NE Rochester. I am a bit of a coffee fanatic and got super excited because the NE side of Rochester is seriously lacking restaurants and coffee shops compared to other spots in town. If you don't believe me, go drive on Circle Drive starting at RCTC and go North until you hit IBM and tell me how many coffee shops you drove by. I'll save you the counting...it is 0.

Caribou's Cabin is Finally Open in SE Rochester!

According to the Rochestermn.gov website, the following was filed by Coffee Holdings, LLC:

Conditional Use Permit #CD2021-035CUP by Coffee Holdings, LLC, for the development of a 554 square foot fast food restaurant and accessory drive-in facility within the B-1 zoning district. The site is located north of Wheelock Drive NE and East of Viola Road NE
Final Plat #CD2021-034PLAT by Coffee Holdings, LLC, to be known as Viola Heights Third. The plat proposed two lots on 2.4 acres. The site is located north of Wheelock Drive NE and East of Viola Road NE

The first photo doesn't show the new Kwik Trip but that takes up a large portion of the green space on the right side between Viola Rd. NE and County Road 22. The new coffee shop would be on the corner of Viola Road NE and Wheelock Dr. NE.

Newest and Cutest Coffee Shop in Rochester had quite the transformation!

I've been waiting pretty much forever for the new Caribou Cabin to open up in Rochester, Minnesota. We first heard that Caribou was going to be building this adorable coffee shop by Cub Foods way back in May of 2020. So, yeah, it's been a test of our patience. I've been slowly watching the progress take shape and was super excited to pull up and grab a cup of coffee on their opening day. Yes, as of November 30th, 2021, the Caribou Cabin is finally open!
